When we took over Gut Wilhelmsberg in 2018, we found the perfect conditions to create great sparkling wines. The shell limestone soils around Kitzingen provide perfect grape material. Our 13-meter-deep cellars maintain constant temperatures year-round, ideal for extended bottle aging. Silvaner is a grape variety that has rarely been used in sparkling wine production, but its reserved character allows for plenty of room for long lees aging. Naturally, we therefore wanted to use the Franconian flagship grape variety rather than the traditional Champagne grape varieties for our first vintage sparkling wine. With a delicate texture, yet taut and gripping at the same time, this Silvaner brut natur presents itself as an invigorating wine, but is also particularly suitable as a food accompaniment.
