The shell limestone soils around Kitzingen provide perfect grape material. Our 13-meter-deep cellars maintain constant temperatures year-round, ideal for extended bottle aging. Silvaner is a grape variety that has rarely been used in sparkling wine production, but its reserved character allows for plenty of room for long lees aging. Naturally, we therefore wanted to use the Franconian flagship grape variety rather than the traditional Champagne grape varieties for our first vintage sparkling wine.
